David Lattin, WinemakerWhile finishing his degree in Microbiology at Oregon State University in 1981, David was working with a German graduate student isolating cold-tolerant malo-lactic bacteria from Oregon Pinot Noir and Chardonnay. It was this graduate student who suggested that he become a winemaker after graduation. It was one of those “aha!” moments when everything foggy becomes clear. He had already spent several years abroad while growing up and seen where wine was grown around the world, so he knew he’d end up in a beautiful place. He was studying yeast and bacteria, so he realized that 4 years of college would not go to waste. He was minoring in German and had studied French and Italian, so he might get a chance to use some language skills. And most importantly, he already loved to cook and drink wine! After weighing several options for further study, David applied to and was accepted into the Masters of Enology program at UC Davis. While at Davis, he met Larry Brooks of Acacia Winery who was auditing the Wine Microbiology class and for which he was the Teaching Assistant. Larry convinced him to take 6 months off to intern at Acacia for the harvest of 1984. That was it. The winemaking bug had sunk its fangs deep and there was no turning back. Six months of living and making vineyard-designated Pinot Noir and Chardonnay gave him his first appreciation of site specificity in winemaking, and what he learned with that first harvest has stuck with him to this day. After completing his studies, he turned in his thesis and headed off to France for the harvest of 1985. He picked grapes and eventually landed a job in the cellar of Troplong-Mondot in Saint-Emilion. After returning to the States, he worked as Enologist at Robert Pecota Winery in Calistoga, spent a short time as Enologist at Storybook Mountain Winery, and was eventually hired back as Enologist at Acacia Winery in 1987. In 1992, he was promoted to Winemaker, and in 1997
one of the best wine-tasting experiences ever.

George was a fantastic host, and we enjoyed our time with him immensely. It was great to hear about the history of his wine business as we sipped cabs, ate delicious food, and looked out over the beautiful golf course at Meadowood. Highly recommended!
My friend and I had an absolutely exquisite tasting and lunch with George Noble at Meadowood. We expected a mid-size group and were delightfully surprised our tasting was private with the owner! Not only were the red wines extraordinary, the company was even better. George was a delight and I can't recommend this experience to enough people. Thank you, George!

George Noble and his wines were the highlight of our trip! This is a can't miss experience. I have already sent friends to meet him for a fantastic lunch featuring a vertical of his excellent aged cabs! Paring these wines with lunch at Meadow Wood capped off the experience!
This is a unique experience that affords the opportunity to enjoy a beautiful setting, a delicious meal, fabulous wines and fantastic company. Being able to sit with Mr. Noble one-on-one and get to know him and learn about his wines made for a memorable afternoon. This luncheon was a highlight of our trip.
What a great experience . We loved everything from the restaurant, the food, the wines and specially being able to sit down with Mr Noble to talk wine among other things. Very different experience that I highly recommend to any wine lovers out there.
My girlfriend and I were extremely pleased with our luncheon. We not only got to have amazing food provided by Meadowood Grill, we discovered the most delicious flight of Cabs with Mr. Noble himself. I would highly recommend to anyone wanting to have an incredible food and wine experience. Great food, great wine, and most importantly great company. We ordered 6 bottles! Thank you George!!!!
This was an absolutely wonderful experience and a highlight of our trip. The restaurant was beautiful (we were able to dine outside), the food delicious, and the wines amazing. I wouldn't hesitate to do this experience again.
A delicious lunch with the owner of a boutique winery. Easy, unassuming, and plenty of very pleasing wine.
We had a terrific lunch at Meadowood Grill and thoroughly enjoyed the vertical tasting of 2004, 2005, 2006 and 2007 Cabernets with Mr. Noble. We ended up buying 6 bottles of each vintage and can't wait to try the future years when they're released!
An unbeatable food and wine experience. Going beyond the 'bites' that most wineries provide in their pairings, the Vintner Luncheon is an over the top flight of aged Cabernets and multi-course meal expertly selected to pair beautifully with the wines. The wines are impressive! Noble Wines Cabs easily stand up to the most iconic brands at a very reasonable price. These wines are a collectors dream!
We had a great time enjoying a leisurely lunch with the winemaker and tasting Noble's 2004, 2005, 2006, and 2007 vintages. Both the wine and the experience were wonderful!
This was a great experience and I highly recommend it to anyone looking to really get to know a vitner and the wines as well as those looking to avoid the tourist traps of Napa. The wine was excellent (we got a vertical of Cabernet Sauvignon) and the location + food was amazing!
